The Cake of the Year
A year ago I came home to Porthgowan on the ebb, half-drowned in my own life. This summer I stood in my grandmother's kitchen with a queue out the door, a cat on the sill, and a wedding cake the size of a christening font rising in the cool, and I caught myself being happy — which, in my experience, is exactly when you should start watching the tide.
The queue was the sort of thing I'd stopped daring to imagine last June. It ran from the counter, past the flour-dusted glass of the pastry case, out the propped door and along the quay wall, and it was made of people I now knew by their orders. Denzil Nancarrow, eighty-five and first in line as a matter of principle, waiting for the split saffron bun he'd been eating since before my mother was born. Two of the trawler wives with string bags. A pair of grockles in matching cagoules, photographing the sign over the door as though it were a monument, which — to be fair — it had started to feel like one. MEADE'S, in gold that had earned its shine, painted fresh over the winter and touched up twice since, because I could not stop wanting to look at it.
"You've gone soft in the head again," Kensa said, without looking up. She had flour to her elbows and a smear of it along one cheekbone like war-paint, and she was folding butter into a dough with the flat, sure violence I'd taught her and she'd since improved on. "Standing there grinning at the door like a stopped clock. Buns won't shape themselves."
"They might," I said. "You've got them well trained."
"Barnacle's on the proving cloth again."
He was. Nine kilos of one-eared ginger tom, poured across the corner of the linen where the second batch was meant to be rising, wearing the particular expression of a creature who has decided the warm shelf is his by treaty. I lifted the near edge of the cloth. Barnacle did not move; he merely rearranged his contempt.
"He thinks it's a nest," Kensa said.
"He thinks everything's a nest." I slid him — all resentful, boneless weight of him — onto the sill instead, where the morning came off the water in a broad gold band and lit the dust in the air like something you could bottle. He settled, one eye shut, the empty socket of the other turned to the harbour, and began the slow-boil purr that meant the world was acceptable. It was a sound I'd got used to and then, worse, come to need.
I put my hands flat on the bench for a second and just breathed the place in. Yeast and hot sugar and the green mineral smell of the sea coming through the door. The oven — Gran's cloam oven, the great domed brick belly of it, older than the pier — ticking as it held its heat. Somewhere under all of it, if you knew to look for it, the faded ghost of the old sign the new one had painted over: TREGONING & DAUGHTER, the letters my grandmother had never once explained, buried now under mine.
I was, I noticed, happy. I noticed it the way you notice you've left the gas on — a small internal lurch, a here-we-go. Because I'd learned my trade in kitchens that had taught me happiness was a debt you'd be made to pay, with interest, at a time of the house's choosing. Ten years of that. You didn't get to stand grinning at a door. You got your head down and you paid.
So I got my head down. There was, after all, a cake to build.
It was rising in the flour-store, where the thick granite kept the air a good five degrees cooler than the kitchen — the only place in the building fit to hold three tiers of saffron sponge steady through the week. I'd baked the base layers over two days, working before dawn while the sponge was the only thing in the oven, because you cannot ask a saffron cake to share heat with fifty pasties and expect either to forgive you.
Three tiers. The bottom one broad as a font, exactly, and I hadn't said so to anyone but I'd thought it standing over the tin: font-sized, church-sized, the cake for the wedding of the year. Merryn Kellow marrying Nathaniel Vyvyan a week Saturday at St Gowan's, and the reception up on Pentowan Head with the whole Atlantic falling away behind the marquee, and Meade's Bakehouse — my bakehouse, Loveday's bakehouse — making the cake.
The Vyvyans had wanted a London man. That was the thing I turned over in the small hours. Roland Vyvyan, who owned more grand hotels than I'd ever set foot in, had wanted a name flown down, a patissier with a television face, a tower of macarons the colour of money. He had been overruled by a primary-school teacher from Porthgowan who had decided she would be married in her own church with her own village's cake, and had simply, quietly, not moved. I liked Merryn Kellow enormously and had met her four times.
"Saffron and clotted cream," Kensa had said, the day the commission came in, testing the words. "For a wedding. Not — " she'd made a vague gesture that took in imaginary spun sugar and fondant swans " — not fancy fancy."
"It's the fanciest thing there is," I'd told her. "It's just ours."
And it was. Saffron steeped overnight till the milk ran the colour of a low sun. Butter I'd stood over a farmer to get. Eggs still warm some mornings. Flour, sugar, the good raspberry jam we'd put up ourselves last summer, and clotted cream — real clotted cream, scalded and crusted and thick enough to stand a spoon in, the fresh sweet dairy of it, nothing aged, nothing sharp, nothing that had ever been near a cave or a rind. I could have listed every gram that would go into that cake. I had made it all with my own two hands, or would, and I knew it the way you know your own signature. There is nothing in a saffron-and-clotted-cream sponge that could trouble a healthy man. I'd stake the shop on that.
I did not, then, know that I would have to.
The roses were Kensa's. That mattered, and I meant it to matter, because a year ago Kensa Chynoweth had come to me flinching, taught to expect the back of a hand across her knuckles for a wobbling line — the way I'd been taught, God help us both — and I had spent twelve months unteaching it in her and, slower, in myself. Now she stood at the marble slab in the cool with a piping bag of saffron-tinted royal icing and made roses. Not the fat cabbage things you get on a supermarket sponge. Small, tight, opening buds, each petal turned and lifted so it caught the light, the yellow going through to a deep marigold at the heart where she'd double-loaded the colour. She'd designed the whole scheme herself: a spill of them down one side, from the top tier to the board, as though the flowers had grown up the cake overnight.
"That one's wrong," she said, of one I thought was perfect, and scraped it off and did it again. She did it again better.
"Kensa."
"Mm."
"That's the best piping I've seen in a professional kitchen. And I've seen it in some that thought a lot of themselves."
The tips of her ears went red. She kept her head down over the next rose, which is exactly what I'd have done, and said, "It's just roses," in the tone of someone laying up a compliment to spend privately later. I let her have it. That's the trade too — knowing when to look away.
Curtis Pengelly arrived at half past ten, because Curtis Pengelly could not simply telephone.
He came in on the tail of the queue in his good coat with a leather folder under his arm, took in the crowd, the cat, the smell, the sign, and let his face do the small complicated thing it always did in my shop now — the calculation of a rival totting up my takings, warring with a man who'd been through a bad enough year of his own to know better than to sneer at a full room.
"Meade," he said.
"Pengelly."
"You've a queue."
"I've a queue."
"It's the weather." He set the folder on the one clear corner of the counter as though it were evidence. "I've come about the tower."
The tower was the champagne tower, and it was the least of it. Curtis had the reception's canapés, the dessert table, and the coupes-stacked-to-the-ceiling spectacle Roland Vyvyan had insisted on because nothing said money to Roland Vyvyan like a lot of glass balanced precariously in front of two hundred people. Curtis and I had the wedding of the year between us like two dogs sharing a bone neither trusts the other to hold, and the truth — which I would rather have swallowed the piping bag than admit to him — was that I was glad of it. A year ago we'd have sabotaged each other for a village funeral. Now we had a spreadsheet.
"Your cake goes on the table nearest the marquee wall," he said, opening the folder to a plan he'd drawn himself, neatly, the traitor. "Away from the sun off the sea. I've put my dessert run down the centre so it's not fighting you for the eye."
I looked at it. He'd given my cake the best light in the tent and the clearest sightline for the photographs, and he'd done it without being asked, and he was watching me not-notice.
"That's —" I said.
"It's sense," he said quickly, before either of us had to feel anything. "A collapsed centrepiece reflects on all of us. There's only the two bakers in this village and it's both our names on that food if it goes wrong. I'm protecting my interest."
"Course you are."
"I am."
"Kensa," I said, "Curtis has given us the wall table and the good light."
"Told you he wasn't all bad," Kensa said, not looking up from her roses, which made Curtis go faintly pink and me want to hug her.
He stayed twenty minutes and we argued about serving times and whether his dessert table would steal the moment from the cake-cut — it wouldn't; he'd already timed it not to — and when he left he took a saffron bun "to check the standard's holding" and paid for it, which from Curtis was practically a love letter. At the door he paused, folder under his arm, and lowered his voice out of the queue's hearing.
"Word to you," he said. "The old man. Vyvyan. He's been up to the hotel where I do the corporate lunches, and the staff there won't work his private functions twice. He sent a whole service back once because the — " Curtis frowned, reaching for it " — because something wasn't to his diet. Very particular. Sends things back, makes a show of it, humiliates the boy carrying the plate." He shrugged, but it wasn't a careless shrug. "Just — have your ducks in a row. He'll be looking for a village girl to trip. Don't give him the satisfaction."
"I never do," I said.
"You do sometimes," Curtis said, and went, which was fair.
I went down to the slip at noon because we'd run low on the good sea salt Sam kept for me from the works up the coast, and if I'm honest — and there's no one here but the page — because I wanted to.
The tide was making. Half-flood, the harbour brimming up green and glassy, the working boats nodding at their moorings and the bunting already strung mast to mast for the regatta, red and white and blue snapping in the little wind. Sam Trerise was on the hard by the boatshed with the RNLI's inshore launch up on its trailer, down on one knee at the transom with a shackle in one hand and a spanner in the other, and the sun on the back of his neck, and I stood at the top of the slip for a second too long just looking at him before he knew I was there.
That was the whole trouble in one picture, really. That second too long.
Since the open day — since the evening after the open day, the two of us on the harbour wall in the last of the light and neither of us moving away and then, God, the not-moving-away turning into something with a name I still couldn't say out loud — since then we had been this. Careful. Terrible at it. Two grown adults conducting the most-watched secret in a village whose postmistress could read a blush at forty yards.
"Salt's inside on the bench," he said, without turning round. "Kept you the coarse and the flakes."
"How'd you know it was me?"
"You come down the slip like you're not sure you're allowed." He looked up then, and did the thing we'd both got horribly good at — the level, friendly, entirely-casual look you'd give any neighbour, held about half a heartbeat too long, and then away, down to the shackle, colour coming up under the salt-brown of his face. "Kensa well?"
"Making roses. You'd think she'd invented the technique." I crouched by the trailer, on the pretext of the launch, which put my shoulder a foot from his and both of us studying the transom as though it were the most interesting object on the coast of Cornwall. "You're launching for the regatta."
"Running the safety boat, wedding Saturday." He tightened the shackle a quarter-turn it didn't need. "Whole fleet out, half of them who've no business steering a bath, and the visitors swimming off the beach. Somebody sensible has to be on the water." A pause. "Talan's crewing standby with me. Won't miss his sister's wedding for anything, mind, but he'll do the morning run and be up the church for two."
"Sensible," I agreed. My hand was flat on the warm gunwale an inch from his. Neither of us moved it. On the wall above us I could hear the tick of Peggy Chynoweth's sensible shoes and we both, without a word, without looking, took our hands back and stood, and put a whole boat-trailer's width of daylight between us, and Peggy came round the shed with her cardigan and her radar and found us discussing sea salt like two saints.
"Robyn, my bird," she said, delighted, taking us both in at a glance, storing it. "Sam." The pause she left after his name could have berthed a trawler. "Lovely morning for it."
"For what, Peggy," Sam said, which was a mistake, and he knew it the second it was out.
"Oh," said Peggy, "for whatever's going on," and beamed at the harbour in general, and told me my saffron buns had been the talk of the sub-committee, and left, and the two of us stood there with our ears on fire like a pair of teenagers.
"She knows," I said.
"She doesn't."
"Sam. She knows."
"She suspects." He rubbed the back of his neck. "There's a difference and I'm holding the line on it." And he almost — almost — reached out and touched the flour still on my sleeve, and thought better of it, and picked up the spanner instead. That was us. Cowards, the pair of us, and something underneath the cowardice so bright I couldn't look straight at it either.
I got my salt. I was at the top of the slip, the paper twist of flakes in my hand, when I asked — idle, over my shoulder, the way you ask a thing you don't yet know is a hinge the whole story turns on:
"You met him yet? The father. Groom's father."
Sam went still in a way that told me more than the words.
"Roland Vyvyan," Sam said, wiping down a shackle, not looking at me in the careful way we'd both got good at. "Wanted the whole harbour cleared of working boats for his son's do. For the view." He almost smiled. "Reckon he'll love your cake."
I did not know yet that Roland Vyvyan would be the last thing that man ever tasted, or that the whole village would decide I'd baked it for him.
The Family Vyvyan
You can learn everything about a man from how he treats the person pouring his drink. Roland Vyvyan treated the boy pouring his drink like a stain, and the whole marquee laughed along, and I thought: there is a man who has never once in his life been told no — and somebody, somewhere, is very tired of it.
That was Thursday. Two days before the wedding, and Porthgowan had already surrendered.
You felt it the moment you came down onto the quay with the sun still low over the harbour mouth. The Vyvyan Collection had descended the way weather descends, all at once and from everywhere, and the village had gone quietly mad with the size of it. There were vans double-parked the length of the front — florists from Truro, a linen firm from Exeter, a marquee company whose lorry had taken out Petroc Angove's newly painted bollard and left a scrape of white paint like a wound. Peggy Chynoweth stood in the door of the post office with her arms folded and her eyes everywhere, storing it up. Half the fleet had been asked, very politely and with a great deal of money, to move their working boats to the far pontoon so that the wedding party's view of the water would be uninterrupted by anything so vulgar as work. Talan Kellow's Morning Maid had not moved. It sat there among the borrowed prettiness like a fist on a lace tablecloth, and I loved it for that.
I had the first tier in the back of the van, boxed and braced and colder than the morning, and I drove it up the head myself. I don't hand the important things to anyone. Not yet, and maybe not ever. Kensa understands this about me now; she'd wrapped the sponge and the crumb-coat with her own hands the night before and then stood back with that particular stillness of hers, the one that means don't you dare drop it, and I hadn't.
Pentowan House sat at the top of the lane like something out of a story that had gone slightly to seed. Grey granite, tall wet-looking windows, a portico with a crack running through one column that somebody had filled and painted over and hoped about. It had been a hotel once and then a nothing for years, and now it was hired for a fortnight and stuffed with more staff than it had probably seen in a decade. The lawn ran flat and green to the very edge of the head, and then the world simply stopped — the cliff, the drop, the whole grey Atlantic laid out and shining, and below, if you went to the low wall and looked, a set of worn stone steps falling away to a cove that the sea took twice a day. I looked at those steps for a moment longer than I needed to. I don't know why. The tide was on its way out.
The marquee had gone up on the lawn overnight, vast and cream and swagged, and inside it smelled of trodden grass and hot canvas and, faintly, of the field kitchen they'd rigged at the back. That was where I was headed. A caterer learns a marquee kitchen the way a sailor learns a strange harbour — fast, and looking for what will hurt you. Gas rings on a duckboard floor, a cold store humming in the corner, three hired ovens I would not have trusted with a jacket potato. Curtis Pengelly was already in there in his whites, up to his elbows in a crate of champagne flutes, and he gave me a nod that a year ago would have been a sneer.
"They've put us on the same floor," he said, by way of good morning. "Your cake table's there. Try not to embarrass us both."
"Morning, Curtis."
"There's no ice till eleven and the man says the generator trips if you run two ovens and the fryer." He straightened up, and for a second the mask slipped and it was just two cooks in a bad kitchen sharing the truth. "It's a lot of wedding," he said, quietly. "Watch yourself with the family."
I should have listened harder.
I met them the way you meet a brigade on your first shift — all at once, and I had them read before the introductions finished.
Rowena Vyvyan came first, because Rowena Vyvyan arrived at every place first, glossily, as though the room had been waiting for her and could now begin. Second wife, and she wore it. Everything about her was expensive and slightly too tight — the pale silk, the smile, the way she held her champagne without drinking it. Brittle. That's the word my grandmother would have used, and Gran was never wrong about people. A woman polished to a hardness. She looked at my cake box the way you'd look at something the cat brought in, and then looked away, bored already, scanning the marquee for whatever it was she was actually there to find.
Behind her, sweating, came the money man. Piers Trevaskis. Thirty years Roland's partner, someone told me later, and he had the look of a man who'd spent all thirty of them apologising. Good suit, bad colour. He shook my hand and his was damp, and he kept his phone in the other one like a talisman, thumbing the screen, glancing at it, glancing at the door. He said "lovely, lovely" to me about nothing at all and moved off to a corner and put the phone to his ear and turned his back, and his shoulders were up round his ears the whole time. Frightened of something. Frightened men are easy to spot and hard to read; the fear covers whatever's under it.
Then the groom. I'd have picked Nate Vyvyan for the groom in an empty room, and not for a good reason. He had the careful, ducked-head quiet of a boy who's grown up flinching. Handsome enough, thirty or so, and every kind word anyone said to him seemed to cost him something, as though he didn't quite believe he was allowed it. He was standing with Merryn Kellow, and that was the one good thing in the marquee — because when he looked at her, the flinch went out of him for as long as the look lasted. Merryn I knew; a Porthgowan girl, teaches the little ones at the school, and she'd fought Roland Vyvyan to the mat and won on every point that mattered — her village, her church, her bakehouse's cake — and she had the soft, unbudgeable steadiness of granite under moss. She squeezed my arm when she saw me. "It's perfect," she said, before she'd even seen the tier. "I know it's perfect."
And at the quiet edge of all of it, doing everything, was a woman nobody was introducing.
She had a clipboard she didn't need — she plainly carried the whole day in her head — and she was moving through the marquee settling things the way you settle a nervous kitchen, a word here, a hand there, the florist unstuck, the seating plan smoothed, a wobbling table leg noted and dealt with. Around fifty, plainly and beautifully dressed, no fuss to her at all. She reached me last.
"You must be Robyn," she said. "Marina Carew. I do the family details." A smile that reached her eyes and stayed there. "I've heard about your saffron. Loveday Meade's granddaughter. That means something, in this county, whatever anyone tells you today." She said the last part lightly, but she said it looking straight at me, and I understood I'd been handed a small kindness and a small warning in the same breath.
"You're—" I started, and couldn't finish it cleanly, because nobody had told me who she was and I could feel it wasn't a simple thing.
"I'm Nate's mother," she said, easily, taking me off the hook. "Roland and I were married a long time ago." And she moved on to rescue a swagged curtain from a caterer's ladder, and I watched her go and thought: the first wife is running the second wife's husband's son's wedding, and doing it flawlessly, and nobody in this marquee is going to say thank you.
Roland Vyvyan arrived like his lorries. All at once, from everywhere, taking out something on the way in.
He was smaller than his reputation and made up for it with volume — not loud, exactly, but total, the way a certain kind of man fills a space so completely there's no room left for anyone else's weather. Silver hair, a beautiful jacket, a voice built for rooms. And charm, real charm, the first-class sort, switched on for the marquee the second he entered it — a joke for the florist, a compliment for the linen girl, a warm heavy hand on his son's shoulder that made Nate go stiff as a plank.
He worked the room, and I watched him find the tender place in each person and press it, smiling, so gently and so publicly that no one could ever have called it cruelty out loud.
The boy pouring the drinks came round with a tray. Young, local — one of the Angove cousins, doing a bit of casual work for the fortnight — and he was nervous, and a flute chattered against the tray as he offered it, and a thread of champagne ran over Roland's cuff.
"Good God," Roland said, delighted, to the whole marquee. "They've hired the shakes. Is there anyone in this village who's done a day's proper work?" He held his wet cuff up like evidence. The boy went the colour of a boiled ham and mumbled and reached with a napkin and Roland stepped back from him as from something unclean. "No, no. You've done quite enough." And the marquee — the florists, the linen girl, half his own party — laughed, because that's what you do when the man who's paying finds something funny. The boy fled. Marina Carew was at his elbow before he reached the flap, a quiet word, the napkin taken gently from his hand; I saw that too.
"Nathaniel." Roland turned to his son, and his voice went warm and confidential and carried perfectly. "Stand up straight, for God's sake. You look like something apologising." He said it fondly. That was the trick of it. He said everything fondly. "Doesn't he, Rowena? Doesn't he look like he's apologising for being born?" And he laughed, and Nate's jaw worked, and Merryn's hand found his and gripped.
He got to Merryn next. "And the little schoolteacher." He looked her up and down, and smiled, and it was the smile you'd give a clever pet. "You've done marvellously, you know. Marvellously. Got everything your own way. The church, the village, the— what is it, the local baker." His eyes came to me on the word local like he'd been saving me. "There she is."
The marquee had gone the particular kind of quiet that isn't quiet at all — the kind where everyone's very carefully not looking and hearing every word.
"Roland." Marina, from somewhere behind him, level and pleasant. "The bandstand people need you to—"
"In a moment." He crossed to my table. He looked at the box, which was still shut. He didn't ask to see the cake. That was the insult, and it was deliberate, and it was expertly done. "I wanted Amaury," he told me, conversationally, as though we were old friends and he was confiding a small disappointment. "You won't have heard of him. Two stars. Flew him to a wedding in Como last spring — a sugar-work swan, the guests wept. I offered to fly him here." He spread his hands, taking in the marquee, the head, the whole soft grey glory of my home, as though it were a slum he was being brave about. "And instead," he said, smiling right into my face, warmly, for the room, "I'm told we're having a village girl and a fruited sponge. A saffron bun, essentially. For two hundred people. At my son's wedding."
I've been shouted at by men with knives in their hands in kitchens that would frighten the devil. I did not blink. "It's a saffron and clotted-cream cake, Mr Vyvyan," I said, pleasantly. "Three tiers. My apprentice piped the roses. You're welcome to taste it now if you'd rather not be surprised on the day."
"Oh, I'll be surprised," he said, and he let it hang just long enough for the meaning to arrive, and someone tittered. "I do hope it doesn't— you know." He mimed, delicately, a hand to his stomach. "One hears such things about home kitchens. No inspections. No standards." He patted the box, twice, the way you'd pat a dog you didn't much care for. "If it ruins my son's wedding, my dear, I shall know exactly whose it was."
And there it was, laid out on the table with the linen and the flowers: my whole year's climb, Meade's, the loyal trade Kensa and I had bled to win back, everything — and this man had just told two hundred people and every camera in the county that if anything went wrong on Saturday, the amateur's cake did it. I felt the floor of it under me. He'd built a fall for me and hung a little sign on it. And he'd smiled the whole time.
"Roland." Marina again. She'd come up quiet at his side, and she had a small tray, and on it a single glass and a little dark bottle. "Your restorative," she said.
Something shifted in him — not softened, but settled, the way a difficult service settles when the last order finally lands. He turned from me as though I'd ceased to exist, which I had.
And this was the first thing I filed, though I didn't know it was the first of anything. Roland Vyvyan trusted no one. You could see it in every corner of him — the way he watched the money man's phone, the way he checked his wife against the room. He'd not have let the boy with the tray carry his coat. But the little dark bottle he took from Marina's hand without a glance, the way you take a thing from someone you have stopped seeing entirely — and she gave it the way you hand medicine to a patient who has forgotten you are in the room. I looked at her while he did it. She'd just been made small in front of two hundred people, her son insulted, her place unspoken, and she stood there with a stillness I knew. I'd seen it in kitchens, on the faces of people who've stopped arguing back — not beaten, not broken. Waiting. The stillness of someone who has done the sums and is simply waiting for the right night.
Drinks were going round properly now, and this was the second thing I filed, without knowing I was filing it, the way you note the position of a knife on a board.
Roland Vyvyan did not eat.
Curtis's people came through with the good stuff — a board of aged cheeses, proper ones, a Cornish blue that had cost somebody a fortune; a plank of cured ham, coppa, the dark oily charcuterie that the London crowd fell on. Roland waved it all past him with two fingers and a fastidious little downturn of the mouth. "I don't," he said, when the cheese came near, as if the girl had offered him something obscene. "I don't," to the ham. A waiter tilted a bottle of red at his glass and he covered it with his hand — "God, no. I don't touch it." He said I don't the way other men say grace, and I watched him do it three, four times, cheese and cured meat and red wine and then a tray of dark little canapés — Marmite-and-cheese straws, someone said, Curtis showing off — waved away with the same reflex, faster than thought.
I'd have thought fad, or vanity, or a rich man's stomach. Every kitchen has fed a Roland Vyvyan; you learn their list and you don't ask. I filed it because I file everything — who eats what, who won't, who's performing and who's genuinely careful — and I thought no more of it than that.
What he did instead was theatre.
Marina held the little tray and Roland took the dark bottle from it — small, brown glass, no label, the contents black-looking as it caught the light. Homemade, plainly; the cork was the kind you push in by hand. He held it up so the room would look, and the room looked.
"None of your poison for me," he told them all, delighted with himself, waving the bottle at the wine, the cheese, the whole spread of ordinary human pleasure. "I'll take my own medicine, thank you.
